Stawberry or Cherry Cobbler!

I know that its been a while, but I got so busy finishing up my thesis that I had to put thing son the back burner for awhile. I started this post this summer, which seems so long agao. I decided to finish it up because its nice to have some summer loving in the winter time.

So anyways, we have this massive Cherry Tree in our backyard.It makes a lot of cherries. So many that we beg our friends to come pick them. Thankfully we have some people that oblige. The cherry tree is nice though because it allows us to have some fresh desserts for the few weeks that we have the cherries. Yes, I know that I could freeze the cherries and make the cobblers year round, but not only do I hate the work associated with trying to get the cherries ready for freezing, I also tell myself, that it's bad for my health to make them year round. Excuses, Excuses...... :)

         We also are lucky to have a huge bed of strawberries in our yard. We also use the strawberries for our lovely cobblers.

Cherry Cobbler Recipe


·         2 1/2 cups sweet cherries, pitted
·         1 tablespoon cornstarch
·         1/4 cup fine-grain natural cane sugar

·         1 1/4 flour
·         2 teaspoons baking powder
·         1/3 cup sugar
·         1/4+ teaspoon salt
·         1 egg
·         1/2 cup buttermilk
·         3 tablespoons butter, melted and cooled a bit

Preheat oven to 425F degrees. You can butter a 9 - 10-inch round tart pan, however I use 5-6 small Pyrex dishes for individual cobblers. It makes them easier to save and eat them. Also, instead of butter, I use a healthier cooking spray.

In a small bowl toss the cleaned and pitted cherries with the cornstarch and sugar. Set aside for about 10 mins while you mix the cobbler topping.

To make the cobbler topping, combine the flour, baking powder, and sugar, salt in a large bowl. In another separate, smaller bowl whisk together the egg and the buttermilk, whisk in the melted butter. Fold the buttermilk mixture into the flour mixture until it's barely combined. Try not to work it too much. Also be prepared to make mess.

Spoon the fruit mixture into the prepared dishes. Now top the cherries with the buttermilk dough by dropping dollops into the dish - not too big, or they won't cook throughout.  Push the batter around and out to the edges with your fingers if you need to.

Bake for 15 -20 minutes or until the top is golden and cooked through.
Serves about 8.

The cobblers are great and when you think about, not too bad for you right? I like to top them with a whipped cream so that is what starts to make them bad for you. :)
